## The Best Thai Noodles in Bangkok, Our Pick: Ratchawat Market

This might be a bit of a cheat, but instead of singling out just one spot, we're going to take a chance and recommend the entire area in front of Bangkok's Ratchawat Market as a gold mine for noodle lovers.

At one nameless shop, an old man has been serving up the same styles of steaming hot noodle bowls for 50 years. Available in several noodle varieties, dry or with soup, they come garnished with a few perfectly cooked pieces of liver, pork and fish balls.

The Guay Teow Tom Yum Khun Muay shop looks like it should have been abandoned and boarded up rather than packed with happy customers hunched over steaming bowls of spicy noodle soup.

And Ma Yodpak Radna Ratchawat has fantastic pad see ew (stir-fried wide rice noodles) and sen yai radna (wide rice noodles in a brown sauce).

Beef noodle fans should head to Nua Wooah Rai Tiem Taan, a noodle stall surrounded by huge shady trees that turns out a wonderful bowl of simple noodle soup topped with fresh lettuce, thick slices of marbled Kobe beef, crispy fried garlic and a rich beef broth.

All of these Ratchawat eateries sit on Nakhon Chaisi Road, except for Nua Wooah Rai Tiem Taan, which is just around the corner at 500/2 Rama 5 Road. Open daily from 9:00 to 15:00.

## The Best Thai Noodles in Bangkok, Our Pick: Rad Na at Guay Tong

Rad na is a dish of stir-fried rice noodles heavily influenced by Chinese cuisine, yet seasoned 100% the Thai way.

For the best rad na, TV host and food critic Chef McDang recommends Guay Tong, which has branches at Thonglor 13, Muang Thong Thani in Nonthaburi, and in Hong Kong.

"The noodles themselves need to be fried to the point where they take on a metallic aroma," he says.

"In Thai we say 'glin gratak,' which refers to the smoky scent of the wok. It's hard to find these days because people don't know how to cook it properly. They toss something in the wok but don't use enough heat. But the rad na at Guay Tong is very good."

Opened 15 years ago, Guay Tong serves a wide range of dishes based on old family recipes, including fried seafood, fried chicken and tasty vegetable-based plates.

Don't be put off by the fact that Nara sits in the basement of an upscale shopping mall, because there's nothing predictable or dull about this charming Thai bistro.

There's plenty to choose from on the menu, but the Sukhothai boat noodles are especially delicious. The combination of sweet, salty, soft and crunchy will blow your mind (and your sinuses, if you forget to ask them to make it not too spicy).

The decor is refreshingly modern for anyone tired of the same old "traditional" Thai interiors found in every other restaurant in town.

At lunchtime Nara fills up with local businesspeople and high-society ladies, so be sure to book a table in advance.

The family-run Provence Cafe, tucked inside Bangkok's Plaza Peninsula, boasts a huge menu of satisfying pasta, seafood and meat dishes. But it's the Thai noodle dishes that leave local foodies drooling.

When prime ministers and celebrities like TV chef McDang come to your restaurant specifically for your boat noodles, you know you're doing something right.

The noodles are made by hand on site, and all the ingredients are fresh, including the imported beef. But it's the perfectly seasoned broth that makes this dish stand out in Bangkok.

In fact, the owner tells us that his regulars have grown so used to the chef's broth that they can tell right away if she's on vacation and someone else is working in the kitchen.

Provence now has a branch in Gaysorn Plaza, but for the freshest noodles McDang recommends sticking with the original at Plaza Peninsula.
