## Nahm

Serving refined Thai cuisine with exceptional attention to detail, top-quality ingredients, and real authenticity, Nahm delivers one of the finest dining experiences in Bangkok. Chef David Thompson, who earned a Michelin star for his London Thai restaurant of the same name, opened this outpost at the Metropolitan hotel in 2010.

If that doesn't sway you, perhaps this will: it's the only Thai restaurant to make it into the world's top ten restaurants. Drawing on recipes rooted in archaic Siamese cookbooks and other dishes handed down in "funeral books," you'll get both flawless takes on Thai classics like tom yum goong and fresh surprises that are hard to find outside a Thai home.

## Issaya Siamese Club

Issaya Siamese Club is the first flagship restaurant in Bangkok from internationally acclaimed Thai chef Ian Kittichai. Set in a beautifully restored colonial house, the menu pairs traditional Thai cuisine with modern cooking techniques.

There are a few misses, but for the most part everything on the menu is unique, delicious, and beautifully presented. We recommend the banana blossom salad, the chili-glazed ribs, and the massaman lamb.

## Bo.lan

Bo.lan has been making waves on Bangkok's culinary scene since it opened in 2009. Serving hard-to-find Thai dishes in a chic, sophisticated setting, the restaurant stays true to the roots of Thai cooking while still knowing how to add a signature touch.

Located on Sukhumvit Soi 24, Bo.lan's standouts include a smoked Chiang Mai river trout salad, egg yolks stuffed with green curry, and stir-fried beef with dried shrimp paste. It's a great spot for a romantic dinner or a business meeting with colleagues who appreciate fine food. For the especially hungry, there's a generous set menu.

## Gaggan

Topping the latest "Asia's 50 Best Restaurants" list, the progressive Indian restaurant Gaggan is one of the most exciting places to emerge in Bangkok in recent years. But don't walk in expecting to tuck into the usual Indian fare like butter chicken or lamb biryani.

El Bulli-trained chef Gaggan Anand uses molecular techniques to give an unexpected twist to classic dishes from his native India, making many of them unrecognizable while still delivering that "a-ha!" moment when the connection hits your taste buds. The best table in this two-story colonial Thai house looks straight into the kitchen, where you can watch Gaggan and his team in action. Culinary theater at its finest.

## Supanniga Eating Room

If you want more from Thai cuisine than green curry, pad thai, and papaya salad, Supanniga Eating Room is an excellent choice in Bangkok. It occupies a narrow three-story shophouse in Thonglor, decked out with bare concrete walls, yellow booths, and street-side sofas on the top floor. Inspired by Trat province on Thailand's southeastern coast and the northeastern Isaan region, the menu rewards the uninitiated.

Among the highlights: Yum Tua Puu Goong Sod (a crunchy green bean salad with shrimp and boiled egg in a chili-paste dressing) and the sweet, herbal moo chor muang (rich pieces of pork in an earthy curry made with sour leaves). Nearly every dish here is colorful, so yes, you'll be photographing it before you eat, and the vibe is laid-back.

## Somtum Der

At this little eatery you'll get personal service and authentic Isaan-style street food without the street. The restaurant is air-conditioned, which is a relief since the dishes are pretty spicy. The chicken, pork, and seafood are well grilled and served with sticky rice. The vegetables are fresh and crisp. A great quick stop where you can drop in wearing flip-flops.

## Soul Food Mahanakorn

A favorite among expats, soft lighting and wooden finishes define the cozy interior of this three-story shophouse. Soul Food Mahanakorn's kitchen revolves around whatever's fresh at the markets: seafood from Sam Yan one day, meat from Or Tor Kor the next.

Wholesome organic ingredients like rice, meat, and some vegetables come from organic farmers in the northeast. Recommended dishes: everything. It's all good here. The cocktails are fantastic too, especially the "Bangkok Bastard," a drink much like a mojito but with a Thai twist.
